Santa Fe Chicken

I've started this new Sunday routine and it's got me feeling extra domesticated. My routine starts with Sunday mornings consisting of... wait for it... meal planning (I know, it shocks me too). After I get a full week of dinners planned out on paper I write up a grocery list. I only have a few rules when it comes to finding recipes: a dish can't have more ingredients than I can count on my hands, I must have at least one or two ingredients already in my pantry or refrigerator, and it needs to be healthy (see: wedding diet).

After I get my plan down on paper I head out to the tanning bed (can't look pasty in that wedding dress!), then to Starbucks for some fuel, and finally to the grocery store with list and Grande Skinny Hazelnut Macchiato in hand. I used to despise going to the grocery store, but these days I actually kind of like it. It think having a list and plan definitely helps (extreme type A over here people). I shop at Winn-Dixie where I use my Winn-Dixie card and score all sorts of awesome deals. This past Sunday I got 3-piece chicken breasts for buy one get one free. Score! I get so excited after checkout that I have to call Steven immediately (because it can't wait for the five minute drive home) and tell him how much money I saved on our groceries for the week.

On the menu this week was a recipe called Santa Fe Chicken that I found while searching through Pinterest. It hit all the rules: only six ingredients, I had four of the ingredients already in my pantry, and it was (somewhat) healthy. The best part of all, however, was how delicious it tasted. I've had a mean craving for Mexican food lately, but I haven't yet given into the temptation. This recipe actually hit that craving on spot without breaking the calorie bank.

So, if you are looking for a quick and easy weeknight meal, I've got you covered.
Santa Fe Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup olive oil
- 2 cups tortilla chips
- 1 cup salsa
- 1 cup sharp cheddar cheese
- salt & pepper to taste

Directions:
- Preheat over to 400 degrees and grease large baking pan
- Cut chicken breasts in half and season with salt & pepper
- Pour olive oil into a small bowl
- Crush tortilla chips into crumbs and place in another bowl
- Dip each piece of chicken in mayonnaise/olive oil mixture and then coat in tortilla chip crumbs
- Bake 30 minutes at 400 degrees
- Remove from oven and top each chicken breasts with a spoon full of salsa and cheddar cheese. Place back in oven for approximately 5 minutes or until cheese is melted

  2. Yum! And I love when a recipe doesn't take a lot of "hand-on" time - love the ones that I can basically just throw in the oven on weeknights. I do the same thing on Sundays and we plan out what we want for dinners each week, then my husband actually does the grocery shopping. If we have a plan going into the week we are so much more likely to cook at home and eat healthy. I'm definitely going to pin this recipe!

  3. You had me at Mexican. This looks delicious! I think we eat SOME type of Mexican dish at least two days out of the week. There have been a few weeks recently that some type of Mexican dish was in our meal plan four times. I try to steer away but they are so easy and yummy and my husband doesn't seem to mind either.

  4. look at you go! Isn't it so much easier once you've got your meals planned for the week, i never realized how much difference it would make for me! I love grocery shopping, i know most people don't but really shopping of any kind is for me!
