Chicken Roll Ups

Lately I've found myself in somewhat of a rut in the cooking department. I come home, pull out one of the five packs of chicken breasts from the freezer, throw a few spices on top, and bake. It's easy, it's healthy, and it's quick. However, eating baked chicken for dinner every night can get boring. My sweet husband would never say anything to me, but I know he gets a little let down every night when he sees me pull that package of chicken out of the freezer. So this week I decided to mix things up a little bit (but obviously not too much since even the title of this post is about chicken...) and try something new. I did what anyone would do when they want to find a new recipe and headed straight for Pinterest (I even have a board that is dedicated to all things chicken recipes. Things is getting out of control fast around here...). I did what I always do when looking for new recipes, find something with ingredients that I can pronounce and/or know where to find them in the grocery store and something that doesn't have more ingredients that I can count on my fingers. After a few minutes of scrolling, I landed on the perfect recipe, Chicken Roll-Ups. They looked delicious, had simple ingredients, and I could count them all using only one hand. They were obviously a winner in my book. So Tuesday evening after getting home from the gym I opted to whip these up for dinner instead of my normal baked (and overly dry) chicken dish. Needless to say, my husband was thrilled about it!

I always get really anxious when cooking something new. I'm mainly concerned about cooking the world's worst dish and then not having anything else in the house to eat for dinner. It's a legit fear that actually came true one night over a plate of porkchops, but that's a story for another day. Thankfully, the Chicken Roll-Up recipe did not disappoint. This dish was fast, easy, and so very delicious! In fact, it's probably going to become a staple dish in our household. So, without further adieu, I present to you the easiest recipe you will ever make.
Chicken Roll-Ups

Ingredients:
  • 4 cans shredded chicken breasts 
  • 1 tube crescent rolls 
  • 1 can cream of chicken soup
  • Shredded cheddar cheese
Directions:
  • Preheat oven to 375 degrees
  • Drain and shred chicken into small pieces using hand mixer
  • Roll up chicken and shredded cheddar cheese into crescent roll and place in baking dish
  • combine 1/2 cup water with cream of chicken soup and pour over the roll ups
  • Bake on 375 degrees for 20-25 minutes or until crescents become golden brown on top
And just like that you have the world's easiest dinner recipe. The original recipe called for actual chicken breasts to be boiled for an hour and a half and then shredded, but in my opinion the canned shredded chicken worked just as well and was a lot quicker. I loved it, the husband loved it, and the dogs really loved it, so it looks like this dish will be hanging around the Sparks' household for a while now. Oh, and bonus points that it was incredibly inexpensive to make.

  3. I do the frozen chicken thing way too often too and these look AMAZING! and I am all about using canned chicken when I can get away with it - putting this on my recipes to try list.

  5. I've seen this on facebook and pinterest and so want to try it even though I think in the past I've had it at a friends house and it was good. Will definitely have to try this.

    You could try things in a crock pot. :D
