Ranch Parmesan Crusted Chicken

What sounds better than ranch dressing and parmesan cheese combined into one scrumptious dish?! Not a whole lot, that's what. Per usual, I spent my Sunday meal planning, which meant stalking around on Pinterest for easy weeknight meals that I could whip up for Steven and I. We are both incredibly busy during the week, but with the wedding only a short 45 days away (!!), we have found ourselves particularly busy lately. I came across this recipe and it hit all of my requirements: I can count all the ingredients on my fingers, I already had most in my pantry, and less than an hour from start to finish, so I decided to go for it. Definitely a good call on my part!

This chicken recipe is going at the top of my favorites list for so many reasons. There is enough "unhealthiness" involved that the fiance approved, but it still wasn't terribly breaking all my wedding diet rules. Actually, it did break a lot of the wedding diet rules, but I paired it with a side of broccoli and called it a night.
Ranch Parmesan Crusted Chicken
Ingredients:
  • 4 boneless skinless chicken breasts
  • 3/4 cup dry breadcrumbs (I used Italian breadcrumbs that I already had in the pantry)
  • 1/3 cup parmesan cheese
  • 1 teaspoon garlic powder
  • 1 cup ranch salad dressing
  • Salt and pepper to taste
Directions
  • Preheat oven to 400 degrees
  • Mix together breadcrumbs, parmesan cheese, garlic powder, salt, and pepper in a shallow bowl
  • Coat each chicken breasts in ranch dressing letting the excess drip off
  • Dip in the breadcrumb mixture and coat chicken generously with mixture
  • Place coated chicken breasts on greased baking sheet
  • Bake for 30-35 minutes or until chicken is fully cooked
