Green Beans, Chicken, and Potatoes: One Pot Wonder

12.17.2014

Are you ready for the easiest recipe you'll ever make? Seriously, it's easier than Crock-Pot Buffalo Chicken Sliders, and I didn't think anything could be as easier than that recipe.

The other night while meal planning for the week, I did a quick Pinterest search for "easy dinner ideas" and this one dish continued to pop up over and over again. When I clicked on one of the links, I noticed that the dish called for only four ingredients. I was sold right then and there! But then it gets even better, the entire meal is cooked in one dish. One dish!

Monday while on my weekly grocery store run I picked up my four ingredients for dinner and headed home to start on dinner. Five minutes of prep later, dinner was in the oven and I was able direct my attention elsewhere. Steven got home from work right as I was pulling the dish out of the oven and remarked on how delicious it smelled. Apparently it tasted even better than it smelled because him and I both cleaned our plates, and Steven even went back for a second helping. I can say with certainty that this recipe will be added to the weekly dinner mix.

Ingredients:
3 medium to large potatoes, cut into cubes
3 cups green beans (I bought a bag in the frozen food aisle)
1 lb boneless chicken breasts
1 packet Italian dressing and seasoning mix
1/2 cup stick butter

Directions:
- Line one side of casserole dish with green beans, the center of the dish with chicken breasts, and the remaining side with cut potatoes.
- Cut butter into small pieces and sprinkle over the entire dish
- Sprinkle Italian seasoning over the entire dish
- Cover with foil and bake at 350 degrees for one hour.
-Enjoy!

  5. This is one of my fave meals. I have to admit, I don't use butter though. I use chicken stock instead to save on calories. Sometimes, I switch it up and add ranch instead of italian too. Only if I'm being frisky though :)
